Roasted Pork Loin with Quinoa and Brown Rice

  1. Place pork loin in roasting pan or oven proof dish. Rub olive oil over entire pork loin and season with salt and pepper or favorite seasoning.
  2. Bake at 375° for 75 minutes or until a meat thermometer inserted in thickest portion reads 155°. Let stand 10 minutes before slicing.
  3. Follow package directions for Uyuni Quinoa and Brown Rice. Arrange rice on platter and place sliced pork loin over rice.
  4. Add steamed broccoli around edges of platter and garnish with grape tomatoes and Kalamata olives.

Rice Cooking Instructions

In the Microwave:

  1. Squeeze pouch to separate rice.
  2. Tear to vent.
  3. Heat on HIGH for 90 seconds.

Cooking time for 2 pouches – 2 ½ minutes. Microwave times may vary. Take care when handling and opening the hot pouch. Refrigerate unused portion.

In the Skillet:

  1. Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.
  2. Add 2 Tbsp. of water and heat.
  3. Stir rice occasionally until heated thoroughly.
  4. Serve immediately.

Quick Tips

Preparation Tips: Rub the roasting pan with olive oil before cooking as well. Also, feel free to substitute greens beans or asparagus for the broccoli in this dish.
